seasoning flavor that originated in Southern India. This Curry Powder has to be made just right by slowly roasting the coriander, cumin, fennel, black peppercorns and yellow mustard seeds over a very low heat. They then add the cinnamon, nutmeg, turmeric, cayenne and ginger and grind into a fine powder. This would be great with baked or broiled chicken. Also heard it goes very well with wine.

I really liked the Rio Grande and the Tuscan flavors with roasted tomatoes. Recipe below is how I prepared them.
I like the French and the Smoked Paprika flavors as well. I usually have just a bit on a thin rice cake.
Roasted Tomatoes with Goat Cheese
4 medium vine-ripened tomatoes
3 Tbsp balsamic vinegar
1 log goat cheese
1/4 c dried cranberries
1/4 tsp sea salt
1/4 tsp ground black pepper
1 tsp black sesame seeds
1 Tbsp sesame oil
Heat oven to 400. Slice tomatoes into 1/2-inch thick slices. Pour vinegar into 9x13 glass backing dish and swirl to coat bottom of dish. Place tomato slices in dish, overlapping, if necessary. Slice cheese and arrange over tomatoes. Sprinkle with salt, pepper, cranberries & sesame seed. Drizzle sesame oil over the top. Bake for about 30 minutes until cheese is lightly browned and tomatoes appear roasted. Enjoy!
NOTE: I used the Humbleheart goat cheese in a tub from Madison Farmer's Mkt. Sometimes, instead of sesame seeds I tossed in walnuts.
