I bought the maple syrup cheese at the market this morning, and strawberry jam from Gypsy Ranch. For brunch, I made pancakes and spread each with the Maple cheese. I warmed the jam with a few drops of vanilla flavouring and spread it over the cheese. Topped it all with a fresh strawberry. The guys really enjoyed their "strawberry cheesecake pancakes". Enough so, that they asked for them again for dinner....
"This cheese (Tuscan) is a fantastic compliment to roasted garlic when spread on toasted, crusty Italian bread. Ideal as as an appetizer spread, or combined with sundried tomatoes as a stuffing in baked chicken breasts. Pair with your favorite red wine as part of a delightful meal!."

"I really liked the Rio Grande and the Tuscan flavors with roasted tomatoes. Recipe below is how I prepared them.
I like the French and the Smoked Paprika flavours as well. I usually have just a bit on a thin rice cake.
Roasted Tomatoes with Goat Cheese
4 medium vine-ripened tomatoes
3 Tbsp balsamic vinegar
1 log goat cheese
1/4 c dried cranberries
1/4 tsp sea salt
1/4 tsp ground black pepper
1 tsp black sesame seeds
1 Tbsp sesame oil
Heat oven to 400. Slice tomatoes into 1/2-inch thick slices. Pour vinegar into 9x13 glass backing dish and swirl to coat bottom of dish. Place tomato slices in dish, overlapping, if necessary. Slice cheese and arrange over tomatoes. Sprinkle with salt, pepper, cranberries & sesame seed. Drizzle sesame oil over the top. Bake for about 30 minutes until cheese is lightly browned and tomatoes appear roasted. Enjoy!
NOTE: I used the Humbleheart goat cheese in a tub from Madison Farmer's Mkt. Sometimes, instead of sesame seeds I tossed in walnuts."
